This was really great and fantastic to have a house full of guests again after corona. <p></p><p>A classic Danish birthday coffee contains three key ingredients: freshly baked bun served with plenty of butter, cream cake and hot chocolate. Hot chocolate or drinking chocolate has no space inside my kitchen, as I DISLIKE the taste of hot chocolate and cocoa milk !!! I managed for do some shopping during some of the programme breaks. I went to some supermarkets, where I stocked on both saffron and vanilla powder. The saffron I will use to bake <a href="https://kitchenofkiki.blogspot.com/2019/06/classis-buns-with-saffron.html">saffron buns</a> for my upcoming birthday. I use the vanilla powder instead of vanilla pods.<div><br /></div><div>I also managed to located two shops selling hand-dyed yarns produced by local yarn dyers. I found two merino yarns in green made by <a href="https://www.joladesign.se/">Joladesign.se</a>, and in the shop <a href="http://www.garderobendesign.se/">Garderobendesign</a> I also found some merino and mohair as well hand-dyed in some other green colours by <a href="https://www.garnlycka.se/">Garnlycka.se</a>.</div><div><br /></div><div>Four of the merino yarns fits perfect together in a knitting project of some kind. And it is the peak evening for enjoying roasted "hveder" - wheat buns with cardamom.</div><p></p><div><p>This year I tested out a recipe I located in the weekly magazine "Hendes Verden - issue 19 / 2022" being rich in egg. I have have no changes to the recipe expected for the kneading and raising procedure, where I used my usual way of kneading & raising. Keep salt & sugar away from the yeast.</li><li>Place the bowl on the stand-alone mixer.</li><li>Start knead the dough at speed 1 for 8 minutes.</li><li>Afterwards increase the speed to 4, knead for 2 minutes. Check the consistency of the dough. If it is not OK, when knead it at speed 4 for another 2 minutes. Again check the consistency. If needed, knead again for 1 minute and when check consistency of the dough.</li><li>Cover the dough in the mixing bowl with a damp tea towel.</li><li>Let the entire dough raise for approx 40-60 minutes under a damp cloth.</li><li>When you evaluate, that the dough has raise enough, divide the dough into smaller pieces with a weight of 80 g each.</li><li>Shape the dough pieces into bun shapes. Place the bun pieces relative close in pans covered with baking parchment. </li><li>Place the pans with bun dough in the oven (fan oven at 35-40'C). </li><li>Let the bun raise for second time for approx. 40 minutes inside the oven, you could on top fill some boiling water into a container below the dough in the oven</li><li>Heat up the oven to 200'C.</li><li>Bake the bun at 180'C for 20 minutes.</li><li>Serve the buns warm with butter. And I also use the electrical whipper, when I added the lemon juice-gelatine liquid into the whipped egg yolk-sugar mix. For the rest of the mixing I do it gentle by hand.</div><div><br /></div><div>I decided to use pasteurised egg yolk and pasteurised egg white. In Denmark each contain of egg yolk contains 2 egg yolk, while each container of egg white contains 1½ egg white, so therefore I used 3 egg whites. If you start from fresh eggs, when you divide three eggs into egg yolk and egg white.</div><div><br /></div><div>Mango lemon mousse as dessert requires some planning, as the gelatine needs for set for minimum 4 hours or night over in the refrigerator.</div><div><br /></div><div>As I am working with frozen fruit, which many times requires heating up, I actually do the cooking of the frozen fruit the evening, so the fruit is cooled down, before it mixed together with the whipped cream. This is done to avoid, that the whipped cream is melted during mixing.</div><div><br /></div><div><b><u>Lemon-lime mousse:</u><i> - 4-6 servings</i></b></div><ul><li>4 leaves of gelatine</li><li>3 egg white</li><li>4 egg yolks</li><li>65 g sugar</li><li>2½ dl dairy whipping cream, 38% fat</li><li>1 organic lemon - zest & lemon juice</li><li>250 frozen mango pieces</li></ul><ol><li>Zest the lemon and juice the lemon.</li><li>Add the mango pieces into a cooking pot together with the lemon zest and juice. And as usual I will donated the money to charity (Julemærkehjemmene).<br /><br /><b><u><br />Orange jam with ginger & vanilla:</u><i> 6 glasses.</i></b><br /><ul><li>6 organic oranges with thin peel</li><li>2 organic lemons</li><li>600 g sugar</li><li>2 tablespoons fresh grated ginger</li><li>1/4 teaspoon vanilla powder</li><li>potassium sorbate - optional</li></ul><ol><li>Wash the orange thoroughly.</li><li>Cut of bottom and top of two of the oranges and throw away.</li><li>Cut the these two orange incl. the peel into small pieces. Remove any seeds. Place the orange pieces and the orange juice into the cooking pot.</li><li>Do the cutting of the oranges on a chopping board, so all the orange juice can be collected and used in the jam mixture.</li><li>Grate the zest of the remaining oranges and lemon, and add the orange & lemon zest into the cooking pot.</li><li>Peel the orange & lemon, and afterwards cut the oranges and lemon into smaller pieces. Remove the orange seeds during the coating process, as they will give more bitterness in the final jam. Add orange & lemon pieces together with the juice into the cooing pot.</li><li>Add freshly grated ginger and vanilla powder together with sugar into the cooking pot.</li><li>Bring the jam to the boiling pot. Let it simmer gentle for 15 minutes under lid.</li><li>Remove the lid from the cooking pot, and the jam simmer for another 15 minutes.</li><li>Use a blend to get a more homogenous texture. </li><li>Prepare the jam jars by filling them up with the boiling water.</li><li> Stir in potassium sorbate, before you fill the jam into the jam jars.</li><li>Fill the jam into the jam jars. Cut the potatoes into medium squares to obtain equal boiling time.</li><li>Place the potatoes in a medium-large cooking pot. What does it mean ? It is the peak day for eating Shrovetide buns, until you can not stand the sight of these very rich and fatty buns for another year.</p><div><br /></div><div>Shrovetide bun are connected with fasting, which starts 49 days before Easter. And when in the fast period you are not supposed to eat meat and wheat flour as well as not drink milk or alcohol. So before the fast started there was big parties, where you would indulge in these foods. Fastelavnssøndag (Shrovetide Sunday) and the following Monday were the last days, where you could eat meat. The following Tuesday was the last day of eating wheat flour, where wheat buns were baked and eaten. This White Tuesday is also known as Pandekagedagen (Pan Cake Day) again relating to the use of wheat flour in pan cakes.</div><div><br /></div><div>This year I am baking Shrovetide buns, which are in the style of semla otherwise known as the Swedish version of Shrovetide bun. Here you bake the buns, where you afterwards empty the inner part of the bun and fill it up with a filling and top of with whipped cream. Keep salt & sugar away from the yeast.</li><li>Place the bowl on the stand-alone mixer.</li><li>Start knead the dough at speed 1 for 8 minutes.</li><li>Afterwards increase the speed to 4, knead for 2 minutes. Check the consistency of the dough. If it is not OK, when knead it at speed 4 for another 2 minutes. Again check the consistency. If needed, knead again for 1 minute and when check consistency of the dough.</li><li>Let the entire dough raise for approx. 30-40 minutes under a damp cloth.</li><li>When you evaluate, that the dough has raise enough, divide the dough into smaller pieces with a weight of 80 g each.</li><li>Place the bun pieces on the baking tray covered with baking parchment. </li><li>Let the bun raise for second time for approx 45 minutes under a tea towel.</li><li>Heat up the fan oven to 200'C.</li><li>Bake the bun at 200'C for 15 minutes, turning the baking trays around after 8 minutes to get an even baking.</li><li>Cold down the buns.</li><li>Cut the top of the buns. Remove the inner part of the buns. Save the bread crumbs for use in the filling.</li><li>Peel the apple and cut it into 1 x 1 cm squares.</li><li>Turn the apple pieces around in the sugar.</li><li>Melt the butter in a cooking pot.</li><li>Add the apple pieces into the melted butter. I found this to be a great idea, as it would bring me some structure to all the many knitting ideas, which I collect in magazine, online knitting shops and knitting vlogs. <div><br /></div><div>So, for 2021 I made such a <a href="https://kitchenofkiki.blogspot.com/2021/01/make-nine-2021-knitting-project.html">Make Nine 2021 knitting project plan</a>, which I actually <a href="https://kitchenofkiki.blogspot.com/2022/02/knitting-projects-finished-during-2021.html">managed to complete</a>. Yes, I was a little pressured, as lot of Make Nine 2021 projects were sweaters or other knitting projects, where I struggled with the knitting firmness, so I had to re-knit again on a different size of the knitting needle. </div><div><br /></div><div>My good friend from high school was also struggling, so for 2022 we have decided to add smaller projects to our Make Nine 2022 list. Again I have made my Make 2022 plan on a piece of carton, which you can see a photo above. Next to the project, there is two small boxes. The upper box is named WIP (Work in Progress), and here I can place a cross as well as the date, when I start on the specific knitting project. For all these various knitting projects I have used 22.931 m's of yarn, so quiet close to the <a href="https://kitchenofkiki.blogspot.com/2021/01/knitting-projects-finished-during-2020.html">amount of yarn used in 2020</a>.</div><br /><p style="text-align: center;"><br /></p><div class="separator" style="clear: both;">Nine of these 17 knitting projects were a part of my <a href="https://kitchenofkiki.blogspot.com/2021/01/make-nine-2021-knitting-project.html">Make Nine 2021 knitting</a> aspiration, which I managed to finish off late November 2021. I place the biscuits in a plastic bags to keep the pieces together.</li><li>Stir the mashed biscuits and butter together.</li><li>Place the mass as bottom layer in the cake form. Place it cold in the refrigerator, until it is needed again.</li><li>Place the gelatine leaves in a bowl of cold water for 5 minutes.</li><li>Add lemon zest together with sugar and cream cheese into a mixing bowl. Whip it together using a electrical beater, until the mass is homogenous. </li><li>Afterwards add in the sour cream and whipping cream and whip everything together again.</li><li>Add the lemon juice into a small cooking pot, melt the gelatine leaves in lemon juice, as you heat up the lemon juice.</li><li>Slowly pour the lemon juice into the cream cheese base as you whip it. It is important to whip thoroughly to avoid gelatine lumps or strings.</li><li>Whip the egg white into firm mass in a separate clean bowl.</li><li>Gently fold in the whipped egg white into the cream cheese base.</li><li>Pour in the raspberry puree, leave 2-3 tablespoons for decoration of the top of the cake.</li><li>Mix it together, but the look should be marbled. </li><li>Remove the cake from the refrigerator, pour the cheesecake mass on top.</li><li>Add the remaining 2-3 tablespoon raspberry puree on top for decoration.</li><li>Place the cheesecake cold in the refrigerator for 4-6 hours or night over.</li><li>Serve and enjoy :-) Happy Valentine day to you :-)</li></ol></div><div class="separator" style="clear: both; It is best to drink a sweet type of champagne/sparkling wine, so the champagne does not clashes with the sweet marzipan cake.</p><p style="text-align: left;"><br />For this year I have created these marzipan cake with orange twist using a recipe from the weekly magazine "Hendes Verden" (issue 52/2021). I have made no modifications to this recipe. </p><p style="text-align: left;">The advantage of baking your own marzipan cakes is, that you decided on both the sweetness level as well as the taste of these cakes, if you want to twist the taste. Here in Denmark the tradition is to eat marzipan cake (kransekage) together with a glass of champagne (it is best to drink sweet champagne, when you eat marzipan cake to avoid a clash in your mouth between sweet cake and dry champagne), as we step from the old year into the new year.<br /><br /><div>If you would like to bake your very own marzipan cakes, I will already now share my entire collection of various suggestions on marzipan cake (known as kransekage in Denmark), which I have created during the "life time" of Kitchen of Kiki. It will give you time to go shopping for the needed ingredients as well as baking them for New Year's Eve tomorrow and perhaps clear out the last Christmas marzipan left-overs.</div><br />I find, that the major advantages of making your own marzipan cake is, that you are in control of the overall sweetness in the final cake, so you can make the cake more or less sweet according to your sweetness preference, instead for "just living with" the sweetness in the cakes, which you buy, which I find to be too sweet !!!<br /><br />If you would like to have more softness in your marzipan cake, you should <a href="http://kitchenofkiki.blogspot.dk/2012/01/texture-adjustments-in-marzipan-cakes.html">freeze them after baking</a>. It takes time to boil the rice porridge, and afterwards the rice porridge has to cool down, before you can add in the whipped cream.<div><br /></div><div>This time I decide to prepare the rice porridge the traditional way, so by cooking in a cooking pot instead of the preparing it in the microwave own. When you boil the rice porridge the traditional way, you need to have patience, as you should the cooking slowly and gently, so you do not end up with a burned rice porridge. <br /><br />I have found this recipe in the weekly magazine "Hendes Verden" (issue 50/2021). My modification is, that I have added a pinch of salt as well as mixing the vanilla corn with ½ teaspoon sugar.<br /><br /><b><u>Indulgent rice pudding:</u><i> - 4-6 portions</i></b><br /><ul><li style="border-color: initial; border-style: none; border-width: medium;">1 dl porridge rice</li><li style="border-color: initial; border-style: none; border-width: medium;">1 dl water</li><li style="border-color: initial; border-style: none; border-width: medium;">5 dl milk (full fat or use what you have in the refrigerator)</li><li style="border-color: initial; border-style: none; border-width: medium;">1 vanilla pod - cut and vanilla corn removed and separated by ½ teaspoon sugar</li><li style="border-color: initial; border-style: none; border-width: medium;">pinch of salt</li><li style="border-color: initial; border-style: none; border-width: medium;">2½ tablespoon sugar</li><li>almond split from 100 g almonds without skin</li><li>4 dl dairy whipping cream - 38% fat</li><li>cherry sauce or <a href="https://kitchenofkiki.blogspot.com/2018/07/cherries-in-rum.html">cherries in rum</a></li></ul><ol><li>Start by cooking the porridge rice in the water for 2-3 minutes.</li><li>Add in the milk little by little together with the salt , vanilla corns and the vanilla pod.</li><li>Gentle bring the rice porridge to the simmer, stirring regular. </li><li>Let the rice porridge simmer gently for 50 minutes.</li><li>Meanwhile prepare the almond by removing the skin. Place the almonds in boiling water, the skin is remove slipping the almond after 4-5 minutes standing time in the hot water.</li><li>Chop the almonds.</li><li>After the cooking of the rice porridge stir the in the sugar.</li><li>When the rice porridge is cooled down, remove the vanilla pod. </li><li>Stir in the chopped almonds.</li><li>Whipped the dairy whipping cream. Keep salt & sugar away from the yeast.</li><li>Place the bowl on the stand-alone mixer.</li><li>Start knead the dough at speed 1 for 8 minutes.</li><li>Afterwards increase the speed to 4, knead for 2 minutes. Check the consistency of the dough. If it is not OK, when knead it at speed 4 for another 2 minutes. Again check the consistency. I have no made any modification to this recipe.</div><div><br /></div><div>I am not buying any almond flour, as I will use my Bamix blender to blend whole almonds into a fin flour type. I am lazy, so I blend the almonds with their skin on. Perhaps this can be called "whole grain" almond flour ?</div><div><b><u><br /></u></b></div><div><b><u>Wafers with almond flour:</u> <i>-12 wafers</i></b></div><div><ul><li>75 g almond flour</li><li>250 g wheat flour</li><li>2 teaspoon lemon zest from organic lemon</li><li>1 teaspoon baking powder</li><li>½ teaspoon salt</li><li>500 g milk</li><li>3 eggs</li><li>40 g butter - melted</li></ul><ol><li>Add the almond flour, wheat flour, lemon zest, baking powder and salt into a mixing bowl.</li><li>Add in the milk, and mix using an electrical hand-mixer.</li><li>Add in the eggs, one by one, mixing in between.</li><li>Finally add in the melted butter.</li><li>Let the wafer dough rest in the refrigerator for 30 minutes.</li><li>Heat up the wafer equipment.</li><li>Pour 2-3 spoonful of the wafer dough in the wafer equipment. So I decided to to use a merino wool, where I found a goof offer on Mayflower Easy care. </p><p style="text-align: left;">First I tested to adjust the elasticity of from the original knit pattern to the selected yarn, but did not work for me, so therefore I found another knit pattern, where I will use the stitch numbers and use the pattern of the Christmas tree from the "Hals sweater". </p><p style="text-align: left;">Let´s see, if I can knit a new Christmas sweater before Christmas ? And at work it will be served every Friday at lunch, starting from the Friday before the first Sunday in Advent. And some of these dessert portion will actual contain whole almonds, where the lucky finders will be able to pick up a small present in form of Christmas cookies, candy and a mandarine. Even though I have working many years, where I have been working at my present work place, I think I only twice have gotten a portion of ris à l´amande with a whole almond in-side, whereas some of my colleagues have almost a weekly "hit rate" on the whole almond.<br /><br />So today I will share my way of making ris á l´amande with you for a dessert for this second Sunday in Advent.<br /><br /><strong><u>Ris à l´amande (Traditional Danish rice pudding with warm cherry sauce) - 4 persons:</u></strong><br /><ul><li style="border-bottom: medium none; border-color: initial; border-left: medium none; border-right: medium none; border-style: none; border-top: medium none; border-width: medium;"><br />1 dl porridge rice</li><li style="border-bottom: medium none; border-color: initial; border-left: medium none; border-right: medium none; border-style: none; border-top: medium none; border-width: medium;">3 dl water</li><li style="border-bottom: medium none; border-color: initial; border-left: medium none; border-right: medium none; border-style: none; border-top: medium none; border-width: medium;">2 dl milk</li><li style="border-bottom: medium none; border-color: initial; border-left: medium none; border-right: medium none; border-style: none; border-top: medium none; border-width: medium;">1 vanilla pod</li><li style="border-bottom: medium none; border-color: initial; border-left: medium none; border-right: medium none; border-style: none; border-top: medium none; border-width: medium;">1-2 tabelspoon sugar</li><li>almond split from 30 almonds without skin</li><li>2½ dl dairy whipping cream - 38% fat</li><li>cherry sauce</li></ul><ol style="text-align: left;"><li>Cook the rice and water in the EasyRice cooker in the microwave oven - 15 minutes - 800 W. Do NOT cook the rice porridge with the milk in the EasyRice cooker as you will damage your Tupperware plastic thing. Take the EasyRice cooker out of the microwave oven.</li><li>Add the milk together with vanilla corns as well as the vanilla pod in the Mircroplus pot. Heat it up to the boiling point.</li><li>Mix the warm milk with the rice in the EasyRice cooker and leave it for 10 minute. It was not a hit for me personally. Coffee and I is not always a good combination.
