Round lemon cake from "Te og kager - året rundt"

The Tea Time Treat event is a little different for the month of September, as it is a hybrid of the usual Tea Time Treat combined with another blog event called Random Recipe. Behind this challenge you will find Karen from Lavender and Lovage, Kate from What Kate Baked and Dom from Belleaukitchen.



So I started this challenge by locating all the cooking books, which could be used in connection with making afternoon tea, I found a total of 6 books. However, as they are very different in size, I decided to type the title on a list, so my fingers would not find their preference being biased by my brain.

Afterwards I "asked" Random.org to select a number, and it turned out to be the cooking book called "Te og kager - året rundt" af Kaffe & Thehuset. This is very good choice, as I have never tried any of the recipes in this book.

It took a few look ups to find a recipes, as this cooking book is having suggestions on tea targeted the different season. The first recipe I found was on making strawberry jam, which is a bite out of season being in September. The second recipe found by my fingers was then Rund Citronkage (Round Lemon Cake).

The cake dough has a soft, silky and smooth consistency and the taste is a very perfect combination of lemon taste, acidity and sweetness, which some how reminds me about lemon mousse. And the final touch in form a lemon juice sugar icing is adding the final touch to the easy-to-make cake.

This cake could be considered as a home-made version of the widely known Danish cake "citronmåne" (lemon mone). However, the taste is a million times better !!!!

The "selected" recipe being Round Lemon Cake

Round Lemon Cake from "Te og kager - året rundt: - 1 cake

  • 250 g sugar
  • 250 g butter - at room temperature
  • 4 eggs
  • 1 teaspoon of baking powder
  • 250 g (cake) flour
  • 1 organic lemon - peel and juice
  • Icing sugar
  • 1 organic lemon - peel and juice for the icing
  1. Heat the (conventional) oven to 200'C.
  2. Whip sugar and butter together.
  3. Add the eggs one by one and whip each egg into the cake dough.
  4. Add lemon peel and lemon juice, whip into a homogeneous mass.
  5. Add the baking powder and (cake) flour, whip yet again into homogeneous mass.
  6. Fill a (round) pie form with the cake dough
  7. Bake the cake at 200'C for 30 minutes.
  8. Left the cake cool down.
  9. Make cake icing from icing sugar and lemon juice.
  10. After adding the icing on top of the cake, decorate the icing with lemon peel.
  11. Make a pot of Earl Grey tea and served it together with the lemon cake.

  3. I think lemon cakes are even more pleasing than chocolate cakes - and I really like chocolate so that's saying a lot. This looks absolutely delicious.

      thank you for your nice comment. This lemon cake had such good moisture level, that it kept it´s freshness/softness for 1½ week stored in a air-tight container.

      thank you for lovely comment :-) I am actually thinking about making a spreadsheet covering all my cooking books. This would be a good activity for the coming winter time, when I will stay more at home, as I can not row during the Winter season due to the weather and out-door/water temperature.
