To start off the Christmas baking I tried to bake these almond cakes with hazel nuts as topping froma recipe, which Ihad found in weekly magazine. However, I did not end up was worth to eat, the cakes was dry as sand ! Perhaps you can figure out, what is wrong in this recipe ?
Almond cakes with hazel nuts:- 15-25 small cakes
- 100 g butter - soft
- ½ dl sugar
- 2 dl almond flour
- 2 tablespoons potato flour
- 1 teaspoon baking powder
- Nutella for topping
- Hazel nuts for topping.
- Heat up the oven to 200'C.
- Whip the butter and sugar white, until the sugar is dissolved.
- Add in the almond flour, potato flor and baking powder, and stir until the mass is homogenous.
- Divide the cake dough into 15-25 small portions, which is placed in small muffin forms.
- Place a small amount of Nutella on top, followed by putting a hazel nut on the top of the Nutella.
- Bake the cakes at 200'C for 15-20 minutes.
- Cold down, bwfore placing them in an air-tight container.
