DAYDREAMER

Again a JuiceSelvKasse has found it´s way to my kitchen door, so I can indulgent myself with freshly pressed juices :-) The first juice is called DAYDREAMER, which has a good balance between freshness, fruity flavour profile and sweetness, so all in all a great juice to be enjoyed.

I decided to juice the orange without peel, as I do not like the bitterness coming from juicing too much like, as the lemons are juiced with it´s peel on.

DAYDREAMER: 4 servings
  • 1 broccoli
  • 2 oranges without peel
  • 2 lemons with peel
  • 4 apples
  • ½ knoll of fresh ginger
  • 2 squashes
  1. Clean all the ingredients.
  2. Juice everything together.
  3. Enjoy and store the rest of the juice cold in the refrigerator for 1-1½ day.

Cauliflower mushrooms soup

Again a cauliflower had found it´s way into a weekly vegetable box, which was placed outside my kitchen door :-( Cauliflower is not one of favourite vegetable, actually it is located on my "DO NOT LIST" together with egg plant and fennel.

Well something had to be done, and I did not feel like juicing it, as it not tasting very good in juice, so the only option for me was to turn into soup. This time I was more happy about the consistency and the taste of this soup with cauliflower. At the same time my mother also receive two portions like private senior meal service.

One good thing about soup is, that you easily make a big portion for next day´s meal or freeze it down for an easy evening meal later on.

Cauliflower mushrooms soup: - 6 servings

  • 1 onion - roughly chopped
  • 1 big cauliflower or 2 small cauliflower - roughly chopped
  • 250 g mushrooms - roughly chopped
  • 1.75 l vegetable stock
  • 2½ dl dairy whipping cream, 35-40% fat
  • salt and pepper for seasoning
  1. Put all the vegetables and vegetable stock into one large cooking pot.
  2. Cook everything for 15-20 minutes.
  3. Blend everything into homogeneous mass.
  4. Add the cream.
  5. Bring the soup to the boil again.
  6. Serve together with bread or crispbread.

SHARP PARSLEY

This is another very green looking juice, which actually taste as healthy as it looks ! I could have done with some less healthy taste and some more joyful taste. But you have no control over the content in the JuiceSelvKassen, which I get on a regular basis as one of my weekly vegetable box.

So I close my eyes and think, that this juice must be doing something inside me !

SHARP PARSLEY: - 4-5 servings
  • 2 green pepper fruits
  • 2 yellow pepper fruit
  • 2 cucumber
  • 350 g celery
  • 2 limes with peel
  • 100 g parsley
  1. Clean and rinse all the ingredients.
  2. Juice everything together.
  3. Serve cold.
  4. Store the remaining of the juice cold in the refrigerator cold for another 1-½ day.

FUNNY FUNKY FENNEL

Yet again I have received a JuiceSelvKasse from Årstiderne to keep my juicer busy in my little kitchen. Each JuiceSelvKasse contains ingredients for three different juice and for two portions of each juice type. When I received the latest version for the JuiceSelv Kasse I started off making the most green and healthy looking juice in form of this FUNNY FUNKY FENNEL. I was positive surprised, that despite the healthy green colour, the taste of the juice was not ugly in any way.

FUNNY FUNKY FENNEL: - 5-6 servings
  • 1 cucumber
  • 1 lemon with peel
  • 4 apples
  • 350 g celery
  • 1 brocolli
  • 2 fennels
  1. Clean and rinse all the ingredients.
  2. Juice everything together.
  3. Serve cold.
  4. Store the remaining of the juice cold in the refrigerator cold for another 1-½ day.

DANISH DYNAMITE

I usually like the various juices with beetroot, which I get in JuiceSelvKassen from Årstiderne. It is amazing to see, the beetroot takes control over the entire colour of the juice as it is juiced into the liquid.

When the beetroot is to the smaller size, the taste of the beetroot will be sweet without the earth notes. Using beetroot having a big size, the juice will earth taste, which I do not like a lot.

DANISH DYNAMITE: - 4 servings

  • 1 cucumber
  • 500 g carrots
  • 80 g mint - only the leaves without stems
  • 300 g beetroot
  • 4 apples
  • 300 g spinach
  1. Clean and rinse all ingredients.
  2. Juice everything together.
  3. Serve in a glass.
  4. Store the remaining juice cold in the refrigerator for 1-2 days.

SOMETHING SPECIAL

Sometimes the name of these juice from JuiceSelvKassen is more fantastic than the actual taste of the juice !!! This juice has a fantastic, a beautiful colour, but the taste is not upsetting anyone. The taste is actually quiet bland and uninteresting.

I decided to peel the oranges, as I find that juicing citrus fruits with the peel on is giving too much bitterness to the taste. If you like bitterness, when included the orange peel in juicing process.

SOMETHING SPECIAL: - 4 servings

  • 500 g carrots
  • ½ pineapple - without skin
  • 3-4 cm ginger
  • 2 oranges - without peel
  • 1 broccoli
  • 1 fennel
  1. Rinse all ingredients.
  2. Juice everything together.
  3. Serve in a glass.
  4. Store the remaining juice cold in the refrigerator for 1-2 days.

MUSCLE JUICE

Yet, another green juice. I am always becoming suspicious, when the colour of the juice coming out of the juice turns more and more green. Many time these green juices can have a bitter taste, which I do NOT like. This specific green juice has a taste, which is only a little bite bitter, so I can drink it without making too many ugly faces.

MUSCLE JUICE: - 3-4 servings

  • 1 cucumber
  • 300 g green cabbage
  • 2 pears
  • 1 green lemon with peel
  • ½ pineapple - without peel
  • 250 g broccoli
  1. Clean all the ingredients.
  2. Juice everything together
  3. Serve cold in a glass
  4. Store the remaining juice cold in the refrigerator for 1-2 days

GREEN GINGER

I was positively surprised by this juice. I was expecting a healhty (= ugly) tasting juice due to the use of curly kale and spinach beet, as these ingredients very often bring a loot of bitterness into the final juice. I actually enjoy this juice, as it was quiet sweet without being over bitter, and it could had used an extra 2 cm ginger to be more dominated by ginger in the taste.

GREEN GINGER: 3-4 servings
  • 300 g curly kale´
  • 150 g spinach beet
  • 4 cm ginger
  • 1 lemon - with peel4 apples
  • 6 apples
  1. Clean all the ingredients.
  2. Juice everything together.
  3. Enjoy and store the rest of the juice cold in the refrigerator for 1-2 days.

KÅL & KIWI - CABBAGE & KIWI

I am actually disappointed about this juice ! It does not taste to healthy (= ugly), it does not taste great, it actually tastes very bland and uninteresting !!!! I can not taste the fennel at all in this juice.

KÅL & KIWI - CABBAGE & KIWI: 3-4 servings
  • 1 spring cabbage
  • 1 cucumber
  • 1 squash
  • 2 limes - without peel
  • 2 apples
  • 4 kiwis - with peel, but without ends
  • 1 fennel
  1. Clean all the ingredients.
  2. Juice everything together.
  3. Enjoy and store the rest of the juice cold in the refrigerator for 1-2 days.

FRUITY CAULIFLOWER

As a frequent reader you will perhaps recall, that cauliflower is not one of my favourite vegetables !!! Most times I use it for soups without being really satisfied with the taste and mouthfeel.

So when I yet again received a cauliflower in my weekly vegetable box, I decided to try to juice the cauliflower as more painless way of getting ride of this much hated vegetable of mine !!!!

As a way of hiding the cauliflower flavour, I went with a combination of apples and pears (some other left-over from vegetable box).

It turned to be an OK flavour combination. You can feel some dryness/flouriness coming from the cauliflower in the juice. So I think I have found a good way of using cauliflower for the future.

FRUIT CAULIFLOWER: - 3 servings
  • 1 cauliflower incl. stem, but without green leaves
  • 5 apples
  • 5 pears
  1. Clean and rinse all the ingredients.
  2. Juice everything together.
  3. Pour into a glass and enjoy :-)
  4. Store remaining juice in the refrigerator.

LEMON MINT

It is always with great interest, that I receive the JuiceSelvKasse as one of my weekly vegetable boxes, as this box always brings me a lot of inspiration for new juices. It can be in form of ingredients, that I would never that used for juice on my own. And can also be in form of "been where, done that and no reason for doing it again" !!! ingredients or combination of ingredients for use in juice.

This LEMON MINT is very refreshing in it taste, so I would for sure make it again.

Regarding the lemon, you can juice the lemon with peel, if you like bitterness in your juice. And if you are no fan of bitterness, you should juice the lemon without the peel on.

The same remark is also fitting for the mint. Only juice the mint leaves, if you are no fan of bitterness. If you like the bitter twist in your juice, then you should juice both the mint leaves and mint stems.

LEMON MINT: - 3-4  servings
  • 4 stems of celery
  • 6 apples
  • 1 cucumber
  • 1 lemon - without peel
  • 1 handful of mint - only the leaves
  1. Clean and rinse all the ingredients.
  2. Juice everything together.
  3. Juice the mint leaves in between the apples
  4. Pour into a glass and enjoy :-)
  5. Store remaining juice in the refrigerator.

ENERGIZER

Again I have been looking with great interest in the weekly vegetable box, as it is the JuiceSelvKasse this week. I rotate my weekly vegetable boxes. I have selected four different vegetable boxes, so I received a certain vegetable every forth week.

This ENERGIZER both looks and well as tastes very healthy. Using the entire lemon with the peel on brings a bitter note to the juice. So if you are no fan of bitterness, you should consider to use the lemon after removal of the peel.

ENERGIZER: - 3  servings
  • 6 stems of celery
  • 2 apples
  • 1 spring cabbage
  • 1 lemon - with peel
  • ½ pineapple - peel removed
  • 1 broccoli incl stem
  1. Clean and rinse all the ingredients.
  2. Juice everything together.
  3. Pour into a glass and enjoy :-)
  4. Store remaining juice in the refrigerator.

CARROT LIFT WITH GREEN TWIST

From time to time I need to get to buttom of my weekly vegetable box, making juice is an easy way to use up some vegetable and fruits. This time I have been twisting this recipe on CARROT LIFT into a more green way by adding in some celery sticks as well. The use of these celery sticks are making the juice less sweet, but the taste is still great.

CARROT LIFT WITH GREEN TWIST: - 4  servings
  • 7 apples
  • 7 stems of celery sticks
  • 7 carrots
  • 4-5 cm of fresh ginger
  1. Clean and rinse all the ingredients.
  2. Juice everything together. Juice the ginger in between wither carrots or apples
  3. Pour into a glass and enjoy :-)

SWEET CARROT

The name of this juice is not fitting according to my taste buds !!!! SWEET CARROT and the taste profile is more in the bitter direction due to the use of grape fruits !!! Well I managed to drink the juice, while I was thinking positive thoughts about the health benefits of grape fruits !!!!

SWEET CARROT: - 4  servings

  • 4 apples
  • 10 stems of celery sticks
  • 2 grape fruits - without peel
  • 4 carrots

  1. Clean and rinse all the ingredients.
  2. Juice everything together.
  3. Pour into a glass and enjoy :-)

    BLADBEDEBOOST - SPINACH BEET BOOST

This juice both looks and taste healthy !!! The colour is very grass green, while is taste of cabbage to the the bitter side. I do not think, this juice will become of favourite of mine with it´s "healthy" taste. It is a good idea, not the juice the lemon incl the peel, as this will increase the bitterness to an unpleasant level.

BLADBEDEBOOST - SPINACH BEET BOOST: - 3 servings

    • 2 spinach beets
    • 2 squashes
    • 1 spring cabbage
    • 2 lemons - without peel
    • 4 apples
    1. Clean and rinse all the ingredients.
    2. Juice everything together.
    3. Juice the lemon between the apples.
    4. Pour into a glass and enjoy :-)

      APPLE ORANGE PEAR TWIST

Another way of clearing up in the weekly vegetable box is to make juice. This is basically a fruit juice without vegetable inside. The apples, oranges and pears are bringing all the sweetness into the juice, so I am using the peel of one orange together with lemon incl peel to adjust the taste in a fresh/acidic direction, which I think was managed quiet good in this juice.

This juice is fitting perfect into either breakfast or on a brunch table.

APPLE ORANGE PEAR TWIST: - 4 servings
      • 1 lemon - with the peel
      • 2 orange - one without the peel and one with the peel
      • 7 apples - without the core and stem
      • 7 pears - without the core and stem
      1. Clean and rinse all the ingredients.
      2. Juice everything together.

      Lasagne with plenty of vegetables

From time to time I need to do some clearing in my weekly vegetable box. And one way of "getting ride off" some vegetable, before the next weekly vegetable box arrives on my door step, is to use some of these left-over vegetables in a pasta sauce, freshly squeezed juice or in this case in a lasagne.

I used this recipe on lasagne from Karoline Køkken (book number 5) as starting point for my lasagne with plenty of vegetable.

      Lasagne with plenty of vegetable:

      • 3-4 tablespoons og olive oil
      • 1 onion - roughly chopped
      • 1 clove of garlic - finely chopped
      • 400 g minced beef
      • 3 carrots - roughly grated
      • 1 can of canned tomato
      • 1 can (70 g) of tomato concentrate
      • 4 tomatoes - roughly chopped
      • 4 stems of spring onions - roughly chopped
      • 1 red pepperfruit - roughly chopped
      • salt and pepper
      • 15  lasagne plates
      • ½ i Mornay sauce
      • 50-75 g grated Cheddar cheese
      1. Fry the onion, garlic and meat in hot oil in a cooking pot.
      2. Wait until meat has changed colour, before addition of the vegetables.
      3. Together with the addition of the vegetable add in the canned tomato and tomato concentrate. Season with pepper and salt.
      4. Gently cook the meat sauce under lid for 15 minutes, when remove the lid and cook the sauce for another 10 minutes.
      5. Start by pour some Mornay sauce into the bottom of ovenproof dish, followed by 5 lasagne plates. Next layer is the meat sauce, sprinkled with some grated Cheedar cheese and some Mornay sauce.
      6. Next another 5 plates of lasagne plates topped with the last of the meat sauce sprinkled with grated Cheedar cheese.
      7. Finally finish off with the last 5 lasagne plates, and the last of the Mornay sauce nd finally sprinkled with some Cheddar cheese.
      8. Place the ovenproof dish in the middle of the oven.
      9. Bake the lasagne at 200'C for 30 minutes in the fan oven.
      10. Served the lasagne warm.
