Apple cake with Christmas spices

I am a big fan of cakes and muffins containing apples and cinnamon, so I just needed to bake this apple cake with Christmas spices based on a recipe from Aarstiderne's newsletter: Æblekage med julekrydderier as this recipe is in Danish I have translated into English, so you try it as well.

  • 6oo g apples, ready to use in squares, but still with peel on
  • 300 g cake flour
  • 400 g sugar
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 tablespoon cinnamon
  • 1 teaspoon cloves
  • ½ teaspoon nutmeg
  • 4 eggs - whipped together
  • 1 dl mild rasp seed oil
  1. Cut the apples into squares
  2. Mix flour, sugar, salt and spices together homogeneous
  3. Mix gentle the apples squares
  4. Add the whipped eggs and oil
  5. Put the dough into 25 x 30 cm baking form, which is oiled with butter
  6. Place baking paper on top of the cake dough
  7. Bake in the oven at 170C for 45 minutes
  8. Remove the baking paper
  9. Bake another 15-30 minutes until the cake is finished. Check with a knitting pin or cake tester.
