May - what's up


May - what's up

May is one of the three Spring months, and for me May is the most beautiful Spring due to a forest in vibrant green colour, blooming flowers, apple trees with magnificent flowers, rhubarb in full power growth and some local asparagus for wonderful dishes.

Here in May we will also celebrate "Store Bededag", which is special Danish public holiday, where we eat freshly baked cardamon buns, which is eaten roasted with plenty of butter. 



Another theme, which I will focus on during this month of May is rhubarb as well as asparagus. Rhubarb because they grow for full power in a corner in my garden. Asparagus as it the season in Europe/Denmark for this great vegetable. Look by from time to time, what kind of rhubarb stuff, which I am creating in my little kitchen such as:

March - what's up


March - what´s up ?

Now the first calendar month of Spring has finally arrived here in Denmark. We are still 5 weeks away from Easter, however I spend this afternoon to dig out my Easter decoration items, so I can decorate my home celebrating the arrival of Spring.

I have no specific calendar events, which I have focus on in my kitchen during this month. However, the citrus fruits are still in high season, so I think I will make various citrus jams during this month. I will also be knitting on a green sweater this month, perhaps I will also start the knitting on a Summer dress, so I actually can use this dress with Summer ?

So, look by from time to time to see, what is going on in my kitchen.

Valentine treats - suggestions for home-made treats


Tomorrow it is Valentine Day, so perhaps you would like to make something special for your very own Valentine ?

Anyway you can be very, very certain, that I have been creative again, so look around again tomorrow where I will be sharing some more Valentine ideas with you.

I have the following suggestions, if you were my Valentine.





Valentine cream caramel as a little sweet treat



Valentine fudge


Valentine cookies with pomegranate kernels, white chocolate and rose extract.




Valentine Romance Scones baked in heart shaped form and full of butter, white chocolate and the wonderful Amarena Fabbri cherries



LOVE cupcakes full of yet some more amazing Amarena Fabbri cheeries.


My Valentine cocktail is sparkling tasty combination of rose extract, Cointreau, cranberry juice and sparkling wine for you celebrate your love with.


And as final suggestion thisValentine sparkling cocktail being sparkling wine with rose extract.

February - what´s up


February - what´s up ?

I have noticed the first crocus putting up their head in my lawn, here in the beginning of February, which is very early. So, wonder when the garden lion can role around in the crocus in the lawn this year ?
After a month where some people have been doing their best to ride off the extra Christmas calories during a "white" January in it is time again to have some more fun in form of calories from either butter or alcohol or both, not necessarily in combination.

So after a "white" January it is time again to enjoy some more calorie rich buns in connection with Shrovetide. A Shrovetide bun can be made from either a yeast dough or pastry dough. The inside of the bun can either be a cream fiiling or a mixture with marzipan as key ingredients. I personally have a preference for Shrovetide buns made from yeast dough with a marzipan filling.

Another key event in February is Valentines day (14 February), which I again will be celebrating in my kitchen making some heart sharped stuff.

So, lets start this last Winter month of February with a little inspiration for you and your kitchen. If you should have any ideas, which I could use for the upcoming Shrovetide buns and/or Valentine, please feel free to leave a comment :-)

September - what's up


September - what's up

The month of September is the firstmpnth of Autumn here in Denmark. It is also the season for harvesting apples in your garden. And you will have so many apples, what you have figure out, what to do with all these apples in your kitchen.

Therefore I am sharing some suggestions with you, which has apple as the main ingredient.

August - what's up

August is the third and last month of Summer here in Denmark. Here in August you can still be harvest berries of different sorts, plums and perhaps some early Summer apple will be ready as well. So, you can still make various jams and perhaps find time for some baking of cakes with vegetable.

July - what's up

July is the second month of Summer here in Denmark, and a Danish Summer can be anything from rain over wind to sunshine. So fare it has been an average Summer.

Here in July various berries plays a big role, so you can either buy local produced berries in the supermarket, at small booth along the roads or perhaps just walk into your own or neighborough's  garden to pick fresh berries.


If you have plenty of strawberries you can make this strawberry jam, where apple is used to gel the jam. You could make this strawberry jam with elder flowers.


Another great tasting jam is this gooseberry jam



Besides from jams you can also make jellies like red & black currant jelly, which you can consider as the very first preparation for Christmas 2019 !!!!


Raspberries can either be used for raspberry vinegar or raspberry jam.

June - what´s up ?

June is the first month of Summer here in Denmark, and a Danish Summer can be anything from rain over wind to sunshine. So we will have to see, how the Danish Summer of 2019 will be ?

In June we will still have plenty of wonderful asparagus as we did in May, so here you would enjoy this asparagus soup


Rhubarb are still in season, and they can be used in anything from jam over cordial to cake like this cream cake with rhubarb


June is also the month, where you can pick elder flowers, which can be turned into elder flower cordial a la Lønnestræde

May - what´s up ?



May - what´s up ?

May is the month in Denmark, where everything is full of live in form of blooming fruit trees, all the trees and forests dressed up in the most fantastic green colour full of life and hopeful plenty of sunshine.

May is also one of the month with plenty of days from work, as we celebrate various public holidays, so this you more time to spend in the kitchen. One of these public holiday is Store Bededay (Danish holiday), which is celebrated by eating a special Danish wheat bun called "hveder" (2019 "hveder" wheat buns with cardamon).



My birthday is also in in May, which I will be inviting inviting guests around for either birthday coffee and birthday lunch, so I spend quiet some time to looking various cake recipes, followed by plenty of baking activities in my kitchen. A classic Danish birthday cake is the cream cake such as this



 Asparagus will also play an interesting role in various dishes, one example could be this risotto

Another item in season is rhubarb, which can be used in anything from jam over cordial to cake like these cookies



I will also in the beginning of May participate in the gin workshop on how to make your own gin and tonic, I will keep you posted on this workshop as well. Another activity here in the month of May is the annual Kagens Dag (Day of the Cake) in my local city of Vejle and yes, I have tickets (2019 Kagens Dag !!!!

February - what's up ?



February - what´s up ?

February for me is also really the season for enjoying all different kind of citrus fruits, as they both are in season as well as they can help to keep to the Winter dullness as way.

So here in February I will be making various types of citrus jams in my little kitchen. If you can not wait to see, what kind of citrus jams, which I will be creating, when you can have a look at these jams made from citrus:
